The simplest salad you will ever make

This salad isn't fancy. Although I enjoy making complex salads as main dishes, I usually opt for this simple side salad. Despite being a professional vegan cook in training, I don't always want to prepare elaborate recipes for each meal.

I turn to it whenever a meal lacks greens. It pairs wonderfully with risotto or gnocchi.

I prefer fresh ingredients, but for convenience, I use pre-washed salad greens (I told you, I can't be bothered sometimes 🤷).

The key is the balsamic vinaigrette ⬇️

The balsamic vinaigrette

If you have to learn one salad dressing, it’s this one. Simply combine balsamic vinegar, olive oil, salt and pepper. Adjust the vinegar and oil ratio to your liking (don't forget to taste 🧑‍🍳).

When feeling lazy, I mix all the ingredients and whisk them. For a creamier vinaigrette, add the oil slowly while whisking.

Simple yet customizable

Just because it's simple doesn't mean you can't improve it. I often add crushed walnuts or seeds.

Feel free to add chopped shallot or garlic to the vinaigrette. The choice is yours!

Everyday Green Side Salad

Ingredients

  • 400g pre-washed salad greens
  • 2 tablespoons balsamic vinegar
  • 6 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: 40g crushed walnuts or seeds

Instructions

  1. Place 400g of pre-washed salad greens in a large bowl.
  2. For the vinaigrette: Mix 2 tablespoons balsamic vinegar with 6 tablespoons olive oil in a small bowl. Season with salt and pepper, whisking until emulsified.
  3. Drizzle the vinaigrette over the greens, tossing to coat evenly.
  4. Optional: Add 40g crushed walnuts or seeds if you like for extra flavor and crunch.
  5. Serve this refreshing salad with your favorite main dishes!
